EGGLESS LIGHT STRAWBERRY MOUSSE(WITHOUT GELATIN)

It's always nice to share a good news with my most favorite dessert... And the good news is, my sister is getting married this June and last month she had her betrothal... As I was unable to go for my sister's betrothal, invited akka and mama for dinner... I made this strawberry mousse for them and they loved it...
she had lots and lots of stories to share... And someone had to stop our chat. As they have to leave...But had a great time and So happy for them...
The rush and hussy busy of marriage starts from now...It starts with a shopping spree, arrangement, decoration, inviting people and the list goes on, Even you have loads of days before marriage,your mind thinks of this and that arrangement till the last moment... And I had missed a lot of my relation and friends marriage, I always plan to go to the function, but last minute the plan get's cancelled.And I often tells Rk that I miss a good (kalyana sappadu)...It's a happy and crazy moment especially when cousins, relations and friends meet up in one place. And having a nonstop chit chat time with laughs and jokes in between the busy hours...


Ingredients:

Full Cream - 1&1/2 cup
Fine sugar - 1/2 cup + 1 tbs 
Strawberry  - 20(make a puree)
Strawberry - 10(sliced and mixed with 1 tbs of sugar)
Agar agar - 2 tsp 
Water - 1/2 cup


Method:

Boil agar agar with 1/2 cup of water and allow it to dissolve and bloom completely.

Pour in the full cream mixture to a bowl,add in sugar and whip the cream till stiff peaks.

Then clean the strawberry cut into small pieces and puree the strawberry to smooth paste.Then take a pan add in 1/4 th cup of puree and warm slightly.

Then add in the dissolved agar agar and boil for another 3 mins and allow the mixture to cool down completely.

Add the remaining strawberry puree to the cooled agar agar mixture,Then add in the whipped cream and fold in gently till it's combined well.

Then mix the sliced strawberry pieces with 1 tbs of sugar before you start preparing and finally add the sliced pieces to the mousse and mix gentely.Pour the mousse mixture to any mold or cup in which your planning to serve.And refrigerate the mixture over night un mold and serve with sliced strawberry.   

Notes:

Allow the agar agar mixture to cool down completely or it remains as grains when you mold the mousse mixture.So dissolve the agar agar half an hour before your preparation.And you can replace 2 tsp of agar agar with 1&1/4 tbs of gelatin(dissolve with 1&1/2 tbs of warm water).The difference b/w the two is agar agar(vegetarian) gives a nice firm texture while gelatin(Non-vegetarian) gives a glossy and soft texture.

My mousse has slight sweetness,if you want a sweeter one then add in 3/4 cup of sugar.

Don't skip the cut strawberry pieces it give a nice crunchy texture in b/w the smoothie.And refrigerate the mousse over night or 8 hours before you serve so that you get a firm texture.

  1. hi Revathi...mousse is so delightful...instead of full cream can we prepare it with normal low fat milk? Apart from the taste which we get with full cream, does it takes perfect shape with just agar agar and low fat milk?

    1. Hi shravs thanks for your comment,ya using agar agar gives perfect shape,but sorry i have not tried with low fat milk.Even if you use low fat milk,whip the milk till you get soft peaks,then there shouldn't be any problem with the shape.
