Thought of reducing my weight... So I'm in a
strict diet plan. Rk's friend suggested me to have low carbohydrate diet... So
only fruits, veggie and meats... No intake of rice or Chapatti ... First day it
was too tiring for me then getting used to it... So I’m getting lots of
suggestion from my brother and friends. And this is my brothers version of
roasted asparagus.
Have never tasted
asparagus before and this is the first time I’m tasting it, it tastes similar to peas, and it’s equally good to spinach. Always had
a second thought and finally my diet plan has made me to eat asparagus... It
has a fresh and grassy flavor when tasted. The combination of thyme, garlic and
asparagus is wonderful. And the refreshing green color attracts to give a
try... So try it yourself and enjoy! Side dishes don't get any easier than this. Simply toss asparagus with
sliced garlic, olive oil, salt and pepper, and roast until tender and nutty.
Ingredients:
Asparagus - 20(young)
Unsalted Butter - 1 tsp
Garlic - 8
Spinach - 1 cup
Salt - to taste
Pepper - 1/4 tsp
Fresh Thyme - 1 tbs
Method:
Cut the asparagus into 2 and chop spinach into 1 cup,Take a kadai add in butter and allow to melt,add Add in chopped garlic and saute till golden brown.
Then add in chopped asparagus and saute for 2 mins,then add in fresh thyme and saute for a min.
Add in chopped spinach and salt saute for a min,then add in freshly ground pepper and give a quick stir.
Notes:
While chopping the asparagus,cut the thick bottom part of the stem,it will be hard and will not cook well when cooked.
You can replace fresh thyme with dried thyme also,but fresh thyme has a great flavor.And you can skip the spinach,it's purely optional and without spinach also asparagus tastes great.
Serve plain with roasted veggies of your choice and try this new greens into your meal.
