COCONUT THOGAYAL/THENGAI THOGAYAL

There are some days, when i feel lazy to cook and wanted to do an easy cooking with no chopping and cleaning...So I thought this is the right dish...And when I'm out of stock with veggies I make this thogayal for a change.
Coconut thogayal is heavenly with thanni sadham or a plate of steamed hot rice which makes a wholesome meal for the day... Most of the days my mom dosen't eat non veg telling it is viratham day... But she cooks non veg for me and my brother.During those viratham days she makes this thogayal for her and eat it with rice, pickle or papad....This is a quick simple yet a delicious one...

Ingredients:

To Grind:
Oil - 1 tsp
Coconut - 2 tbs
Toor dal - 1 tbs
Red dried chilly - 3
Asafoetida - 1/4 tsp
Pepper corns - 1/3 tsp
Garlic - 2
Tamarind - a small pinch

To Temper:
Oil - 1/4 tsp
Vadagam - 1/4 tsp
Split urad dal - 1/4 tsp

Method:

Take a kadai pour in oil, first add in toor dal and roast well till slight brown. Then add in pepper corns, dried red chilly and garlic roast for 3 mins.

Then add in grated coconut with tamarind and saute for 3 mins, set aside and cool down.

Then grind the mixture to a smooth paste with little water.

Take a kadai pour in little oil add the ingredients under "To Temper" and give a quick pulse so the it mixes well.

Serve this simple yet delicious thogayal with hot rice or thanni sadham and enjoy.

Notes:

Don't roast the coconut till brown or the taste might differ,so just saute for 2 mins.

You can replace tamarind with 1/2 tsp of tamarind paste.Don't skip the temper it adds more flavor to the thogayal.
