BANANA NUT LOAF RECIPE/NO EGG NO BUTTER BANANA BREAD


Banana cake has become my all time favorite now a day... To tell you exactly, I tasted banana walnut cake in Bengawan solo for the first time... The cake was so spongy and tasty… And when mom came here I got one for her to taste and she just loved it... And weekly once we get a cake and finish off in no time... The cake has a great banana flavor and goes well for breakfast or tea time snack...
I planned to bake this cake long back... But whenever I get banana I keep postponing and finally last week I baked it for one reason and the reason is I said my FIL to get banana when he comes back from his walk... But I totally forgot that I have informed him, and I got Bananas when I went to fair price...I usually buy small banana I feel they r tastier than the long one. So had loads of banana to ripe at the same time, and finally ended up in baking the healthier version of loaf... With wheat flour, soy milk, honey and walnuts all together works so well and loaf was so yummy…


Ingredients:

Dry Ingredients:
Wheat flour - 1 cup
Baking soda - 1/2 tsp
Baking powder - 1/2 tsp
Salt - 1/4 tsp
Walnuts - 3/4 cup

Wet Ingredients:
Soya milk - 1/8 cup
Mashed banana - 1&1/8 cup
Olive oil - 3 tbs
Honey - 4 tbs
Vanilla extract - 1/2 tsp

Method:

Choose very ripe banana mash the banana well and mean while Pre heat  oven to 175°C,then  mix in all the wet ingredients set a said,then swift dry ingredients except walnuts at least twice so that it's incorporated well. 

Then make a dent in dry ingredients add in all the wet ingredients and mix in well do not over mix gently fold and cut,then mix in the chopped walnuts and reserve some for sprinkling on top. 

Take a loaf pan grease the sides and bottom with olive oil and dust in with wheat flour and tap out the excess,then pour in batter and sprinkle the reserved walnuts and bake it for 30-40 mins.And keep checking after 32 min,when the tooth pick inserted comes out clean.Allow to cool down for ten mins and carefully demold the loaf.

Best served when warm and enjoy with your break fast or as a tea time snack



Notes:

Mash the banana when your about to mix in the wet with dry,i did a mistake so my banana became dark.And choose very ripe banana that adds in more flavor to the cake. 

Adding walnuts is purely optional you can replace it with any nuts and you can skip it also.I wished to use soya milk so its optional you can replace it with whole or skimmed milk also.

After adding in batter gently tap the loaf pan so that if any air blocks will be set.Grease the loaf nicely this will help to de mold the loaf easily.
