Malawi prawns, I first tasted this curry in Taj
when we went for short trip in cruise... The curry was so delicious and had a
creamy textured gravy and the prawns in it was so juicy and it had a royal
classic touch... Then when I searched for this recipe I found the recipe in
Sanjeev kapoor the recipe was simple so din’t wait to give a try...
On seeing the amount of coconut used in the recipe,
I had a thought should I give a try... But after tasting the curry I was
totally happy, that everyone in my family liked it especially my FIL who never
eats prawn, tasted the dish and said it’s so delicious... The main ingredients
is dry roasting the coconut till golden brown... This adds the flavor to the
curry and makes the curry rich and tasty... Sure give a try and will be a
change from the usual way of cooking prawns...
Ingredients:
To Marinate:
Prawns - 20(de-shelled,de-vein)
Turmeric - 1/4 tsp
For gravy:
Onion - 1
Cooking oil - 3 tbs
Tamarind juice - 3&1/2 tbs
Coriander leaves - few
To Roast:
Oil - 2 tbs
Onion - 1&1/2
Garlic - 3
Scrapped coconut - 1/2 cup
To grind:
The roasted ingredients
Dried red chilly -8
Coriander seeds - 2 tsp
To Temper:
Coconut oil - 1/2 tbs
Mustard seeds - 1/8 tsp
Dried red chilly - 2
Garlic - 1
Curry leaves - few
Method:
Wash and clean the prawns completely and marinate them with turmeric powder and set a said soak dried red chilly and coriander seeds in hot water.
Take a kadai add in oil saute onions till golden brown then add chopped garlic,then add in coconut and saute till brown.
Then add the soaked ingredients,roasted mixture and grind them to a smooth paste by adding little water.
Take a clay pot pour in oil saute onions till golden then add in ground mixture and saute well till oil leaves out at the sides,then pour in the required amount of water allow to boil for 5-7 then add in marinated prawns.
Cook prawns for 5-7 mins then pour in tamarind water and allow to boil for another 2 mins then add in chopped coriander and switch off.
Then take a small frying pan add in 1/2 tbs of coconut oil add the ingredients under "To Temper" and saute till crisp then add in to the curry and mix well.
Serve hot hot with steamed rice and have a wholesome meal for the day and you will totally fall in love with these prawns.
Notes:
Don't reduce the amount of onions and coconut this will be perfect in spice for the red chilly's i mentioned,but some chilly's are really hot so in that case adjust to your taste buds.
Soak red chilly and coriander seeds at least for 15-25 mins so that i will be ground to a smooth paste or it will not be ground well.
And roasting the coconut is the main ingredient in this recipe so roast them till prefect brown.Cook the prawns just for 7-9 mins or else will turn out rubbery.
